The Foundation: 100% Estate Grown, 100% Texas Fruit
Our journey begins not in the cellar, but in the soil. Unlike many wineries, Kalasi Cellars proudly crafts 100% estate-grown wines using only grapes sourced from our own vineyards in Texas. This includes our expansive 140-acre Narra Vineyards in the Texas High Plains AVA and our smaller, dedicated vineyard right here at our Fredericksburg tasting room site in the Texas Hill Country AVA. This complete control, from vine to bottle, is fundamental to our philosophy. It allows us to meticulously monitor and nurture our grapes, ensuring they reach their peak potential. We believe that exceptional wine starts with exceptional fruit, and by growing our own, we take full responsibility for that quality. We can make growing decisions guided solely by quality, not the profitability of selling a ton of grapes.
Nikhila Narra Davis: A Viticulturalist and Winemaker’s Vision
At the heart of our winemaking is Nikhila Narra Davis, our owner, viticulturalist, and winemaker. With a family agricultural legacy spanning five generations in India, Nikhila brings a profound understanding of the land and a relentless pursuit of excellence. Her journey includes honing her skills at renowned wineries like Cakebread Cellars in Napa Valley, earning certifications in viticulture, and completing a Winemaking Certificate from UC Davis. She is truly one of the preeminent female grape growers and winemakers in Texas, and her dedication is evident in every sip. Alongside Nikhila is her husband and Kalasi Cellars’ other owner, Greg Davis. He too has completed the intense and esteemed winemaking program at UC Davis to bolster Kalasi Cellars’ commitment to raising the quality of Texas wine. Their combined expertise focuses on nurturing the fruit in the vineyard so that minimal intervention is needed in the cellar.
Innovation in the Cellar: Elevating Quality Through Precision
While we honor traditional winemaking principles, we also embrace cutting-edge technology to achieve our stylistic and quality vision. Our Fredericksburg winery, built in 2021, is designed for crafting exceptionally high-quality, small-batch wines. We are proud to be the first winery in Texas with an optical sorting line. This advanced technology gives us unparalleled control over the quality of grapes that make it into our wines, allowing us to select only the most perfect berries based on shape, size, color, and to eliminate any unwanted material. This meticulous process dramatically elevates the quality of our finished product by ensuring only the best fruit makes it into the wine, thus reducing the need for corrective interventions later. This technology is commonly used when producing the highest quality wines in the world.
Following sorting, our red grapes undergo bin fermentation, a small-batch approach that enables close monitoring and control throughout the fermentation process. We then utilize an advanced Pellenc SPC50 press, which allows for gentle pressing, extracting only the purest wine without undesirable elements from the seeds. It is one of the most advanced presses in Texas wine. This precise handling further supports our philosophy of allowing the fruit’s natural character to shine.
The Art of Aging: Letting the Fruit Shine
Once fermentation is complete, our wines are carefully aged. As grape growers first and foremost, we believe in letting the inherent fruit flavors of the grapes truly shine. Therefore, we primarily age our wines in neutral oak barrels, with only a minimal amount of new oak introduced. This ensures that our wines are not dominated by overt oak flavors but instead allow the natural character of the Texas fruit to express itself beautifully. When we incorporate new French oak, we ensure its tannins are well integrated, not jarring. Over months of barrel aging, Nikhila and Greg meticulously taste and make final decisions on blends and finishing protocols before bottling, always with the goal of preserving the purity of the fruit.
Handcrafted Start to Finish: Bottling with Care
While automation plays a vital role in modern winemaking, our commitment to quality at Kalasi Cellars extends right to the very last step: bottling. Here, the human touch becomes paramount. Starting in late 2024, we choose to hand bottle our wines. This hands-on approach ensures that every wine meets our exacting standards, from verifying precise fill levels and cork integrity to detecting any minute imperfections that automated lines might miss. It’s this dedication to individual attention at the culmination of the winemaking journey that truly guarantees the perfection within every Kalasi Cellars bottle, reflecting our philosophy of minimal intervention and maximum care for the finished product.
