January 26, 2025: Valentine’s Pairings
Every year, our wine club has four scheduled club packages. We differ a bit from many other wineries in Texas. We don’t throw big pick up parties, but instead have more quaint events spread out over a few days where we can interact with our club members and provide a more unique experience. Every pick up we try to create something that is special to share with our members. The February pick up is probably our favorite as we get to make chocolates that pair with our wines. This lines up with Valentine’s Day so we like to think it simplifies our members’ lives as it’s one less thing they need to plan for their partners.
We have two new wines coming out: 2022 Carménère and 2022 Merlot. Previous vintages of these wines have been customer favorites, but both varietals haven’t been on our menu for months (Merlot) or years (Carménère) so we’re excited to have them both released again. These are exceptional, high quality wines that have received extremely positive feedback from the members that have tried them so far.
What’s on tap for this year’s pairing? For the 2022 Carménère we’re pairing a chocolate dipped Parle-G (an Indian biscuit) with a touch of Kashmiri chili and Maldon sea salt sprinkled on top. With the 2022 Merlot we’re pairing it with Buckeyes. These are peanut butter balls dipped in chocolate. We were first turned onto Buckeyes by some friends in Pittsburgh, and we’ve been hooked on them for years.
In addition to pairings with new releases, there’s always a customer favorite that sneaks its way into the lineup as a bit of a bonus. We’re pairing our 2022 Teroldego with the now famous “Davis Truffle.” This truffle is a Teroldego infused truffle that is always delicious. These chocolates are all made in house, which is part of what makes this pick up event special. We can really hone in on exactly what we want to pair with each wine.
If you miss out on the club pickup February 1st & 2nd but want to enjoy some chocolate pairings with wine, we will have a separate Valentine’s pairing. We’re hoping to have that ready by February 1st as well to be served at the bar. It is open to non-members and features some changes to the wine and pairing (1 cheese + 3 chocolates) line up. Either way these pairings are a ton of fun to create and savor. As always we do have a Madhu chocolate & wine pairing on the menu 7 days a week.
